  1. Preheat broiler.
  2. Brush both sides of U.S. farm-raised catfish fillets with lemon juice and sprinkle with salt and pepper.
  3. Place flat sides up on oiled broiler pan rack.
  4. Broil about 4 inches from heat for 8 minutes.
  5. Turn fillets.
  6. In a small bowl, mix together cheese, margarine and mayonnaise.
  7. Spread over U.S. farm-raised catfish.
  8. Sprinkle with sun-dried tomatoes and broil an additional 7 minutes or until fish flakes easily when tested with a fork.
