Spinach Tofu Lasagna

  1. Preheat oven to 350°F.
  2. In nonstick skillet, sauté onions and mushrooms in oil.
  3. Add tofu and vegetable seasoning.
  4. Simmer for 5 minutes.
  5. Chop spinach.
  6. Stir in spinach.
  7. Set aside.
  8. Layer noodles, tofu mixture, pasta sauce and cheese in a 13 x 9-inch casserole dish.
  9. Bake for 30 minutes.
  10. Serve with a tossed salad and garlic bread.
