Shabbat Soup

  1. Place turkey neck in large soup pot.
  2. Cover it with water.
  3. Boil for 15 – 20 minutes.
  4. Scrap and discard any froth.
  5. Add vegetables and spices.
  6. Bring it to a boil and simmer on medium heat for 1 hour.
  7. Add pumpkin, parsley and dill and cook for another ½ hour.
  8. When cool, strain soup and add back cut-up vegetables (pieces of carrot, zucchini, onion parsnip).
  9. Serve with noodles and/or soup nuts.
