Roasted Pork with Beans, Radicchio and Garlic

  1. Heat oven to 400 °F
  2. Toss potatoes with 1 tbs oil and ½ tsp rosemary.
  3. Place in roasting pan and roast 5 min.
  4. Sprinkle pork with pepper, remaining rosemary and ½ tsp salt.
  5. After 5 min. nestle pork in center of potatoes.
  6. Roast 25 more min. or until done.
  7. Cut radicchio into slices.
  8. When the pork has 10 min. left to cook, heat remaining oil in a skillet.
  9. Add beans and onions and sprinkle with remaining salt, cook 3 min.
  10. Add radicchio and cook until radicchio begins to wilt and beans are tender.
  11. Stir in garlic and vinegar, cook 1 min.
  12. Remove pork and potatoes from oven, add potatoes to skillet and stir to combine.
  13. Slice pork into slices.
  14. Transfer contents of skillet to a serving platter and top with pork slices.
  15. SERVE IMMEDIATELY.
