Reuben Casserole

Makes 4 servings



  1. Combine rice, sauerkraut, corned beef and ½ cup Swiss cheese.
  2. Blend mayonnaise, pickle relish, mustard and pepper.
  3. Stir into rice mixture.
  4. Turn into shallow 2-quart casserole.
  5. Arrange tomato slices on top.
  6. Season with salt and pepper.
  7. Sprinkle with remaining ½ cup cheese.
  8. Top with bread crumbs.
  9. Bake at 350°F for 30 minutes or until hot and bubbly.
