Nigerian Groundnut Stew II

Serves 3 – 4



  1. Bring chicken to boil with about 2 quart water.
  2. Add salt, hot pepper, onion and garlic.
  3. Simmer until tender cool. Debone.
  4. Using ½ cup peanut butter per lb of chicken (before cooking weight) mix in hot broth until a smooth sauce is formed.
  5. Add chicken and cook slowly for at least half an hour.
  6. Can be cooked for hours in crockpot. If a thicker gravy is preferred thicken with cornstarch.
  7. Salt to taste.
  8. Serve over hot cooked rice with side dishes of tropical fruits as you would curry. "Ground nuts" is the Nigerian name for peanuts
