California Rice Skillet

Makes 6 servings.



  1. Brown Chicken lightly in butter and oil in large skillet over medium-high heat.
  2. Add rice, salt, mustard, broth and sherry.
  3. Bring to a boil; reduce heat, cover, and simmer 15 minutes.
  4. Add onions and vegetables; cover and continue to cook 5 minutes.
  5. Remove from heat; stir 1/2 cup Cheese into rice and sprinkle remaining 1/2 cup Cheese on top.
  6. Replace cover until Cheese melts.
