Breakfast Strata

I personally would not use the white bread...Seems odd for a diabetic recipe! Try using your favorite healthy bread...Low carb/whole grain for better nutrition. Take care, Gloria

  1. Spay an 8-inch round pan with non-stick cooking spray.
  2. In a medium bowl, whisk the eggs until frothy.
  3. Add the milk and bread. Let stand for 5 Minutes.
  4. Add the spinach and cheese and stir to blend.
  5. Pour into the prepared pan. Cover and refrigerate 8 hours or overnight.
  6. Preheat the oven to 350 °F.
  7. Bake the strata, uncovered, until the top is lightly browned, about 30 minutes.
  8. Serve hot or at room temperature.
