Baked Potato Salad

  1. Preheat oven to 325°F.
  2. butter one 9x13 inch baking dish.
  3. Bring a large pot of salted water to a boil.
  4. Add potatoes and until tender but still firm, about 15 minutes.
  5. Drain, cool and ¼ inch thick.
  6. Place bacon in a large, deep skillet.
  7. Cook over high heat until lightly brown.
  8. Drain, chop and set aside.
  9. Combine the potatoes, cheese, onion, mayonnaise and salt and mix well and pour into prepared baking dish.
  10. Top with bacon and , and bake at 325°F for 1 hour.
