Buckwheat roll




  1. Scald the buckwheat flour with boiling salted water; add butter, salt and sugar.
  2. Cool.
  3. Dissolve the yeast in the milk and add it to the flour mixture.
  4. Stir in the wheat flour, make dough and let it rise.
  5. Flour board well; roll out dough to about 2 cm thick.
  6. Spread with filling, form the tight roll, place in buttered baking pan, and brush with melted butter.
  7. Let rise 20 minutes.
  8. Then brush with egg and bake in oven.
  9. After baking 20 minutes reduce heat to moderate.
  10. Serve hot.


  1. Make the filling by mixing cheese, sugar, eggs, and cream together.
  2. Spread this mixture over the dough and sprinkle with raisins and walnuts.
  3. Roll and bake as instructed above.
