  1. Fry your chopped onion in butter until tender.
  2. Add the tomatoes; heat to boiling, then add the cheese, stirring until the cheese melts.
  3. Add everything else but the eggs and saltines.
  4. Stir some of the hot mixture into beaten eggs until well blended.
  5. Add egg mixture to remaining hot mixture, stirring constantly.
  6. Cook for 2 minutes on low heat.
  7. Stir constantly, until thickened.
  8. Serve with saltines.
